The Best Paleo Vegan Cookie Recipe

Alrighty. You guys have been screaming for some recipes to be posted on here so here we go!

This is quite possibly the easiest and healthiest Paleo Vegan cookie recipe ever. But wait. It’s not just a cookie recipe, it’s also a rad power ball recipe as well.

How’s that for versatility! Maybe make up a batch of the dough and go half cookie half ball??

Cashew, Coconut & Vanilla is the flavour of these but you can add whatever additions you wish….maybe some cacao nibs, goji, whole macadamias….

It’s also refined sugar free, high protein, high in calcium, gluten free and delicious.

Ingredients: 2 cups raw cashews 2 cups shredded coconut 3 tablespoons soft coconut oil 1/4 cup brown rice syrup (coconut nectar or honey or even half a banana) 1 tsp vanilla powder or extract good pinch of salt


  1. Blitz the cashew and coconut together until it begins to look like a wet crumble and it starts to clump together. You don’t want to take it too far otherwise you will have nut butter on your hands BUT it should begin to feel a little soft and oily at this stage. If you can’t mould the mix into a ball easily it needs to be blitzed further.
  2. Add oil, brown rice syrup, salt and vanilla and blitz again till it comes together into a soft dough.
  3. At this stage, you can either roll them into balls and maybe some extra coconut and cacao nibs. Throw them in the fridge to set and you have awesome power balls ready for the week. OR, line a tray and roll them into balls before flattening out with a fork. Depending on what size cookie you like the recipe should make 12.
  4. Bake them at 170 degrees for 12 minutes or till golden on top and smell amazing.

Seriously they are the best. Don’t you dare say we don’t love you
