Zucchini Fritters and Wild Rice Tumble
These flavour bomb zucchini fritters go so well with an asian inspired wild rice and veggie tumble. A creamy lemongrass infused dressing brings it all together and you have a wonderfully satisfying, plant packed meal. Wild rice isn't a grain at all but the seed of a grass and has an impressive nutritional profile. We soak our rice always to remove the phytic acid which can pose a problem for digestibility in some.
